should you be able to release all the pressure by unscrewing the header tank cap a little without any water escaping, straight after switching off the engine, after it's up to temperature ?

seems odd, I'm sure on other cars I've been able to let all the pressure out in a few seconds then fully unscrew the cap without water overflowing

there just seems to be a lot of pressure in the system, but I might just be paranoid...

mine did the same mate

my calibra turbo did this all the time and i use to get the sound of air moving around the system when i switched off..
Found out that this was caused by my rad being partly blocked. it ended up blowing my head gasket..

Sorry to make it sound so bad.. worth checking out though

You shouldnt be removing the pressure cap when the engine is still warm. It varies from car to car but yes it will release allot of pressure when you remove the cap hence why its called a pressure cap.
