Yeah that's why I mentioned glowing red - even if you don't know your EGTs or how much of that heat is transferring into the steel, if it's glowing then it's hot enough to matter. Ceramic coating would be good, but then the expense might put you in a position where you could have used something better, for less.
If you do get it somewhere towards 900deg, the chromium (that makes austenitics resistant to corrosion) will form compounds with carbon and it'll start corroding the whole thing, rather than the chromium forming a protective oxide.
Anyhoo, since most exhausts are probably made out of this, I wouldn't worry too much. Use what you can afford, just don't expect it to last for years.
