Where would I get polycarbonate good enough to bond into the hole where the sunroof is coming out of??

LEXAN make top quality polycarbonate. Places like Greenham and Arco stock various quantities iirc. Different shades and thicknesses.

How are you going to just bond it in?
Do you want to install and run "Adobe Flash Player 9"?
    No, now f*** ***.

    Dunnot yet.
Maybe something like mini angle iron and then silicone around it??
Really hadn't thought too much about the semantics of it, just the end result.

If I could get it welded up invisibly then I'd do that... bloody thing leaks like a Bangkok whore as it is

    How about the Weekenny method:
obtain old bonnet. Cut up. Bond over sunroof hole.

Only issue I'd have with that is it'd have to look neat.

This isn't a rally slag car... for using and abusing on the track.

I also need to chat about options and cost for instruments and stuff if I remove the dash... Anyone??

Or see if you can find a base/Merit Astra in the scrappy, and chop half the roof panel out of it.

    Voila, the perfect curvature.

I would fix it in place with body seam sealer. This sticks like crazy, and would be totally waterproof.
