Thats how I did mine.
I used cooking oil though as that won't top out at 100C and doesnt bugger about with the resistance readings.
I nuked it in the microwave in a pyrex dish until it hit around 140C then let it cool down slowly (and boy was it slowly) stirring it all the time so there were no hot or cold spots. As the thermometer registered the appropriate value I logged the resistance.
When it hit room temperature I bunged it in the freezer and continued to take readings while still stirring it every now and again.
