| Lapin? Well after diving back into my cook books I've found a recipie for Lapin en Papillote that I've fancied trying out for ages BUT have never eaten rabbit. So before embarking on this cullinary adventure I thought I'd ask you lot if you've ever eaten rabbit and what it was like? Thanks

| Re: Lapin? rabbit either needs to be cooked really quick or really slow, anything inbetween and it will be like chewing on an old boot, a rabbit saddle takes about 8 minutes to cook at about 220c so its lightly pink in the middle, anymore ands its runined, with the legs, confit them, takes a while but the meat just falls apart. |

| Re: Lapin? Its a much stronger taste than chicken. More bones in it if you get the whole carcass too.
Very tasty though. My favourite way to cook it is to get a deep oven tray and fill the bottom with veg - potatos, carrots....whatever you like really. Get the rabbit and give it a good smear all over with mustard and a light drizzle of cooking oil. Add some water to the bottom (with a stick cube in it if you want) and cover the tray with a good fitting lid or with tinfoil.
In the oven for at least 90 minutes and its well roasted and as Jamie says, the meat is very soft and comes off the bones easilly.
Serve with boiled rice. |
